When I found my house was filled with a group of my husband’s friends wearing different versions of Vikings jerseys, I began to feel headache. I did not hate the mess caused by a group of enthusiastic sports fans, but I was really unsure what I should cook to feed them.
Just as usual I turned to internet for help. Thanks to a friend’s recommendation, I found a recipe-offering site named BHG.com and let my husband’s friends to pick what they would like me to cook. Thank Goodness, they loved a same dish called Cajun shrimp and it seemed easy to make. So I tried that recipe and received high praises from every one of them. Ok, I was feeling better and had no reason to complain when I had to clean up the house.
It was really easy to go. The materials needed include a halved lemon, some water, a small onion, two tablespoons of lemon juice, cooking oil, two cloves garlic, Cajun seasoning, salt, fresh or frozen peeled medium shrimp, green or red sweet pepper and some lettuce leaves. And the whole processing includes only four major steps. Step one is to peel lemon, chop onion and pepper, mince garlic and cut lemon peel into tiny strips. Then we come to step two to combine lemon peel, water, onion, lemon juice, cooking oil, garlic, Cajun seasoning, and salt in a large skillet and heat them to boiling. Now add shrimp into the juice and stir it to coat. Heat all the materials again to boiling and then reduce heat and simmer with the skillet covered. Four-five minutes later you will see the shrimps are opaque and it’s time to stir again. This time you can add sweet pepper into the skillet before transferring the mixture to a glass bowl. 1/2 pounds of peeled shrimps could make about 12 servings.
